You can recompile gnuplot from source or get binary from sourceforge. Alternatively, with your existing gnuplot, you should be able to use X11 terminal (you need to start X11 before starting octave). I, personally, prefer X11 terminal anyway -- its ability to zoom with a mouse wins me over.
