As Dmitri suggests, you could use enhanced text mode.
The only catch is that you need gnuplot 4.1 and AquaTerm 1.0.b3, none 
of which are yet released. So, unless waiting is an option, you'll have 
to get CVS sources for both projects and build them yourself.

With your current setup you may use gnuplot to produce a postscript 
file which can be printed.

Below is the aquaterm help from gnuplot 4.1

gnuplot> help term aqua
  This terminal relies on AquaTerm.app for display on Mac OS X.

  Syntax:
        set terminal aqua {<n>} {title "<wintitle>"} {size <x> <y>}

                          {{no}enhanced}

  where <n> is the number of the window to draw in (default is 0),
  <wintitle> is the name shown in the title bar (default "Figure <n>"),
  <x> <y> is the size of the plot (default is 846x594 pt = 11.75x8.25 
in).

  Use <fontface> to specify the font to use (default is "Times-Roman"),
  <fontzise> sets the font size (default is 14.0 pt).

  The aqua terminal support enhanced text mode (see `enhanced`), except 
for
  overprint. Font support is limited to the fonts available on the 
system.
