On Mac OS X you can use octave with or without XWindows. Fink does not require you to have XWindows to install octave, but it does require gnuplot. So, if you have XWindows check the value of env variable DISPLAY (type 'env' in the terminal) and if you don't have XWindows, check the settings for gnuplot.
